DELISH Dish - Apple Ginger Slaw

This is one of my FAVE fall recipes! It goes great with grass fed beef patties, grilled chicken, or sloppy joes! It's packed with nutrients and earthy flavors. I used Vegenaise (soy free) instead of mayo to keep this DELISH dish healthy!

Apple, Ginger Slaw

Serves 4 / Prep Time: 10 minutes

2 sweet tart apples, peeled, cored, and julienned (I like Granny Smith)

8 radishes, julienned

3 tbls. freshly chopped cilantro

1 tbls. apple cider vinegar

1/2 cup Vegenaise (no mayo)

1/2 tsp. sea salt

1/4 tsp. freshly ground black pepper

1. In large bowl, combine the apples, radishes and cilantro.

2. In small bowl, whisk together the ginger, vinegar, Veganese, salt and pepper.

3. Toss the dressing with the salad. Serve immediately. (this will keep only for 24 hours refrigerated)
