Pomegranate Power

Pomegranates are rich in many nutrients. They aid with anemia by providing iron to the blood. They assist with osteoarthritis by keeping connective tissue strong. Pomegranates have anti-viral, and anti-tumor properties and are high in vitamin A, C, E and folic acid. Helpful for heart related problems as well as helping to reduce LDL “bad” cholesterol.
Not sure how to tackle extracting the seeds without making a mess? Score the pomegranate in quarters, then fill a large bowl with water, place the pomegranate under water and pull sections apart, then start gently pulling the seeds away from the fleshy membrane. The seeds will sink and the fleshy membrane will float to the top making it easy to then remove from the water so you only have the seeds.

Spiced Pears & Pomegranate
- 3 pears – peeled, cored and cut into wedges
- 1 pomegranate, skin & membrane removed
- 1 tbls. fresh lemon juice
- 2 tbls. light brown sugar
- ¼ tsp. ground nutmeg
- ½ tsp. ground cinnamon
- 2 tbls. finely chopped almonds
- 4 sprigs fresh mint leaves
Place the sliced pears and pomegranate seeds into a bowl. Toss with lemon juice to coat. Combine brown sugar, nutmeg and cinnamon in small bowl, mix into he fruit. Cover, refrigerate at least 1 hr. OptionL: top with mint & almonds.
Option: Chop the pears into bite sized pieces and then heat the pears and dry mix with 1/2 tbls. coconut oil (without the pomegranates) over low heat then add the pomegranate seeds and serve.
