DELISH Dish, Wild Rice & Cranberry Dressing

Go against the grain this holiday and try some wild rice. It contains about the same amount of protein and fiber as brown rice, but is higher in B vitamins, zinc, potassium & magnesium. Brown rice however is much higher in selenium, good for thyroid health. Switch up the grains in your diet, variety is the spice of life! Fun fact: Wild rice is Minnesota’s official state grain, who knew?
2 cups wild rice blend
¾ cup dried cranberries
2 tbsp. olive oil
2 large onions
½ tsp. kosher or sea salt
¼ tsp. fresh ground pepper
2 cloves of fresh garlic
¾ cups chopped fresh flat leaf parsley
¼ cups chopped fresh dill
4 scallions
1. Cook rice per instructions. Fold in cranberries, cover and let stand for 10 min. 2. Heat oil in large skillet over medium heat. Add onions, salt, pepper & cook stirring occasionally for 6 min.using a wooden spoon gently stir until shaggy looking mixture. Transfer to lightly floured work surface and knead until smooth 5 min. 3. Uncover and cook stirring occasionally, until onions very tender and golden brown, 4-5 min more, add garlic 2 min, stir in parsley. 4. Add onion mixture, scallions and ill to rice and toss to combine then serve. www.womansday.com
